Beginner Modules
Start from absolute zero and build a solid foundation in espresso extraction. You will learn every piece of equipment by name and purpose -- from the group head to the steam wand -- then pull your first double shot using scales and a standard recipe. You will use a refractometer to measure strength and calculate extraction in real time, giving you an immediate, data-driven understanding of what is happening in the cup. Explore espresso, ristretto and lungo side by side to taste the difference that ratio makes. Then dive into grind control and tamping consistency by preparing three shots, recording strength and extraction for each, tasting everything, and reviewing the data as a group. Finish by building an americano and long black to Australian standard -- drinks every employer expects you to know.
Learn the craft of milk texturing and your first latte art pattern. You will stretch milk by sound and texture -- learning to hear the difference between aeration and rolling -- then swirl and pour your first cappuccino white circle, the foundation of all latte art patterns. From there you will advance to the love heart, the first pattern every barista masters. Two full rounds of guided practice with individual feedback from the trainer on every pour. Then a self-diagnostic session where you identify and correct common faults yourself, building the awareness you need to improve between sessions. You will also run the complete shot-to-cup circuit -- pull, steam, pour -- for two scored repetitions against a rubric, so you know exactly where you stand. End the session by learning the full closing procedure: backflushing, brushing burrs, soaking baskets, and a trainer sign-off checklist that mirrors what real cafes use every night.
Warm up with a shot and love heart to lock in your muscle memory, then run the opening SOP solo: machine warm-up, wand purge, grinder calibration check, dial-in, bar mise en place and stock check -- all timed and checked off. Then move into filter brewing theory where you will learn the difference between percolation and full immersion, understand standard brew ratios, then watch a live demo and practice pour-over with proper bloom technique and staged pouring. Next, walk through the full cafe menu -- flat white, mocha, chai latte, hot chocolate, iced coffee, and alternative milks -- understanding the recipe and build for each. You will build drinks across two rounds with trainer feedback on every single cup, learning to adjust milk texture and espresso balance for each style. This is the module that bridges home enthusiasm and professional capability.
Learn the service standards that separate hobbyists from hireable baristas. This module covers Australian Cafe Level 1 service standards: multitasking, queue awareness, drink batching and customer interaction. You will run a simulated small rush to feel the pressure of real service, then tackle a multi-drink recall drill that tests your memory and organisation under load. Service round two ups the pressure with a bigger rush and mixed menu. Then comes the speed drill -- five mixed drinks in twelve minutes, timed and scored -- the benchmark that shows whether you are ready for a real cafe floor. You will also train on customer interaction and recovery: handling mistakes, remakes and difficult customers with professionalism. Finish by running the closing SOP solo: stock count, float reconciliation, equipment shutdown and full clean-down -- the same checklist used in cafes across Melbourne and Sydney.
Intermediate Modules
Step into precision espresso calibration. You will learn to calibrate the machine from scratch: prime, season and dial in to a target of 27 seconds extraction plus or minus three seconds as a deliberate precision exercise. Then move into grinder calibration step by step, tasting at every adjustment to understand exactly what coarser or finer does to the cup. Dive into strength and extraction science by pulling a shot, splitting it into three marked cups across the pour, tasting them in sequence from first drops to final extraction, then tasting the whole shot as a mixture to understand how flavours layer. You will calibrate the grinder across extraction percentages -- 15%, 16%, 17% and above -- tasting at every step to find the point where further adjustment stops improving the cup. This is the module where you stop guessing and start controlling every variable.
Master two advanced latte art patterns that employers actively look for in interviews. First, the Tulip: a push-pull rhythm that builds concentric rings from the base of the cup upward, finished with a clean heart on top. You will practice the timing, spacing and flow rate until the pattern is consistent and symmetrical. Then the Rosetta: a wiggle-while-pouring technique that creates a fern or leaf pattern -- the hallmark of a barista who has put in serious practice hours. Individual feedback on every single pour means you will know exactly what to adjust -- wrist angle, pour height, milk texture -- to nail the pattern. This module also covers milk diagnostics in depth: how to identify over-aerated, under-aerated and scorched milk by sight and sound, so you can self-correct in real time during a busy shift.
Single origin espresso is a completely different discipline from blend calibration. In this module you will learn why single origins demand a different dialing approach: they are more delicate and acidic, so the goal shifts from balance to origin character. You will taste a pre-pulled flight at different settings and connect each taste directly to the strength and extraction reading, training your palate to read the data. Then you will dial in a Brazil single origin from a starting recipe, adjusting for its specific characteristics -- lower acidity, nutty sweetness, fuller body. This module also introduces advanced extraction theory including pressure profiling basics, water chemistry fundamentals, and a deeper read of the extraction-strength chart. You will compare distribution methods before tamping, pulling and tasting shots each way to see which produces the most even extraction, giving you a clear preference backed by taste.
This is where barista work becomes muscle memory. You will learn Australian Cafe Level 2 speed workflow theory: bar choreography, batching same-milk drinks to minimise wand use, and grouping orders by drink type to reduce wasted movement. Watch the trainer run a three-drink simultaneous flow, then practice yourself: round one is a two-drink flow, round two is three drinks with live feedback. Learn multi-order ticket batching -- reading multiple tickets at once and grouping by drink type and milk to maximise efficiency. Then comes the main event: the pressure test. Six mixed-menu drinks in ten minutes, scored on accuracy, speed and presentation. You will do a warm-up unscored to identify weak points, debrief, then Attempt 1 timed and scored. Debrief again. Attempt 2: aim to beat your first time. Attempt 3: final scored run. Compare all three attempts and watch your speed, consistency and confidence jump in real time.
Advanced Modules
Ethiopia is the birthplace of coffee, and its beans are among the most challenging and rewarding to dial in. This advanced module focuses on Ethiopia's distinctive profile: bright acidity, floral aromatics, and complex fruit notes that require a lighter touch than Brazilian or Colombian origins. You will learn pressure profiling concepts -- how pre-infusion and ramp pressure affect extraction in delicate coffees. Dive into water chemistry fundamentals: how mineral content, total dissolved solids and pH shift flavour perception. Study the extraction-strength chart in depth, learning to read it not just for numbers but for flavour zones: under-extracted sourness, over-extracted bitterness, and the narrow sweet spot where Ethiopian coffees shine. You will dial in back-to-back -- blend, then single origin -- simulating a real shift changeover where the grinder moves from one bean to another. By the end you will understand why the same grinder settings produce completely different results depending on the origin.
Filter brewing is the fastest-growing category in specialty coffee, and this module gives you the full toolkit. You will master three brew methods: V60 pour-over, Aeropress, and batch brew. For V60, you will learn the full technique -- bloom, staged pouring, pulse pouring -- and dial in to hit a target extraction percentage using the refractometer. Then you will repeat the same recipe to prove consistency, because a great barista can hit the same numbers twice, not just once. For Aeropress, you will explore inverted versus standard methods, grind adjustments, and brew time variation to understand how each parameter shifts the cup. Batch brew theory covers grind size, brew ratio, and temperature stability for producing consistent filter coffee in volume -- exactly what cafes need for their batch brew offering. The module also covers filter coffee menu design: how to select origins, write tasting notes, and present filter options to customers in a way that drives sales.
